Miss Ruchika Kumar

I am a PhD researcher in food science at London South Bank University (LSBU), focusing on food safety and chemical contaminants, with particular emphasis on acrylamide formation in Indian food products. My research investigates how cooking conditions such as time, temperature, and ingredient composition influence acrylamide levels, with the aim of developing practical strategies to reduce health risks in commonly consumed foods.

Alongside my research, I work as an assessment and awards officer within Student Operations at LSBU. In this role, I support the integrity of academic processes, ensuring accurate assessment records, student progression, and compliance with university regulations. This experience has strengthened my attention to detail and understanding of academic systems beyond research.

I have a background in quality, health, safety, and food compliance, with hands-on experience in HACCP, GMP, and food safety audits across different food production settings. This has shaped my approach to research, keeping it grounded in real-world application rather than purely theoretical outcomes.

My work aligns with global priorities in food safety, public health, and responsible consumption. I am particularly interested in making research practical and accessible, especially within culturally specific food systems like Indian cuisine, where there is still a gap in targeted scientific data.

I aim to contribute to research that not only advances academic understanding but also influences everyday cooking practices, industry standards, and public awareness around food safety.
