Abstract
© 2016 Elsevier Ltd. All rights reserved.Many novel refrigeration technologies have undergone development. This chapter divides the technologies into those that are equipment-based and those that are food-based. Many of the technologies still require further development and are only currently suitable for application in certain segments of the food cold chain. A number of technologies are either beginning to be applied or are relatively close to market.
